A fun way to get kids to eat their vegetables!

 

Ingredients

Aubergine

Courgette

Potato

Gram/ Chana flour

Salt

Chilli flakes

Chopped Coriander

Jeera/cumin seeds

 

Method:

Mix flour, salt, coriander and spices in a bowl with water to make a thick batter.

Slice Veggies and mix in to batter

Deep fry veg one by one

serve with ketchup and chilli sauch

Banana Cake

This recipe is perfect for using up any ripe or spare Bananas you have in your house!

 

Ingredients

200g flour

200g sugar (for different flavour can use brown sugar)

1tsp baking powder

175g butter

2tbsp oil

2 eggs

Flavourings – vanilla essence/ cinnamon/ mixed spice /chocolate chips

 

Method:

Preheat oven to gas mark 4

Cream butter and sugar in a bowl until white and fluffy

mix in eggs, oil and liquid flavours and mix

sieve in dry ingredients and fold

add chocolate chips/nuts

mash up bananas in a bowl

mix in to mixture

put in to cake tin and bake for half an hour on gas mark 4

 

 

 

Cake Pops

 

Cake pops !!!!!

My babies requested me for cake pops today with their innocent faces I couldn’t say no. Although I wasn’t prepared for it but still made it. I make them and they look marvellous. Kids were stunned and so was i. Very easy and if you don’t want to buy cake pop sticks then use toothpicks…..that’s what I did !!

Ingredients:
1 cake mix or sponge cake
2 bars milk chocolate
1 white chocolate bar
Sugar strands to decorate
Colourful coconut to decorate

Method:
Bake a sponge cake or a chocolate cake and leave aside to cool.
Or buy a cake mix and bake the cake following the instructions.
Once cool break the cake in a bowl to small crumbs. In a glass bowl over boiling water melt one bar of milk chocolate and pour in the cake mixture and mix well to combine.
Make small balls and place on a cake pop sticks (I used toothpicks as I had no sticks) and place in a fridge for 1 hour. Melt white and milk chocolate separately and pour in a small bowls or small glass and leave aside to cool. Dip the cake pops in the chocolate you prefer the white or milk, then sprinkle with decorations of your choice and place on a tray lined with foil or cling film and leave in the fridge for 30-40mins until set.

Arabian Baked Pasta

 

Arabian baked pasta
Ingredients
Macaroni:2 cups boiled in salted water.

Chicken mince 1/2 kg
Chopped tomatoes
Salt,blackpepper,paprika
Onion:1diced
Crushed garlic
3 eggs

For the white sauce:plainflour 3tbsp
Butter 3 tbsp
Salt,blackpepper
Milk 3 cups
Cheese

To oil add diced onion sautee add crushed garlic add chicken cook on slow heat to this add salt ,blackpepper,paprikA powder also add in the diced tomatoes cook until chicken is tender.
For the white sauce heat butter in pan add flour slowly add in milk salt,blackpepper cook until thickend take of heat add in 3 beaten eggs mix chicken and macaroni into white sauce mix.
Place mixture in to oven proof dish top with grated cheese oven cook for 20 mins.

Kidney Beans curry – Rajma

Kidney beans curry

Ingredients:
2 can kidney beans drained
1 large onion chopped
3-4 tomatoes chopped
1tbsp garlic&ginger paste
Whole garam masala=2 bay leafs
4 laung (cloves) 4 black peppercorns (kali mirch)
1 piece cinnamon stick
1tsp chilli powder
Coriander to garnish
Salt to taste
3tbsp oil

Method:
In a pan heat oil and add the whole garam masala, fry until it sizzles.
Add the onions and sauté until golden brown,now add in tomatoes. Add garlic and ginger paste and cook for few min. Add chilli powder and salt and stir,add a little water. You can blend the mixture to smooth paste. Add in the kidney beans and cool for 5min.
Finally add a 1-2 glasses of water cover and cook on low heat for
20-30min until tender. Garnish with coriander and serve with rice.

Shan Masala CHana curry

 

Masala chana curry

I love Shan chana masala it tastes just like from the restaurant but if you follow the instructions you won’t get a good taste or end up too salty so I did a few changes and it was WOW. Please try this way,it makes a lovely curry you could have with parathas for Ramadan !!!!

Ingredients:
3 tins chickpeas
2 1/2tsp Shan chana masala
1 onion chopped
2-3 tomatoes chopped
Coriander chopped
Oil for frying

Method:
In a pressure cooker boil the chickpeas for about 30mins until tender. Remove the lid according to instruction and add the Shan chana masala and cook for 30min until the colour changes to a darker shade. Add the tomatoes and coriander and mix well.
Fry the onions in oil separately until golden brown and add in the curry.
Cook for 5-10min and serve with halwa puri breakfast,nan or rice.

Ingredients:
1kg chicken liver washed
2tbsp ginger crushed
2tbsp garlic crushed 
1-2 onions chopped 
3 tomatoes chopped
1tsp chilli powder
1/4tsp haldi
1tsp coriander powder
Pinch of black pepper
1/2tsp cumin 
4-5 cloves grinded
2 bay leafs 
Salt to taste 
4tbsp oil
