Chicken buffalo wings

Chicken wings 12
Flour 1 cup
Hot sauce 1/2 cup
Butter 1/4 cup
Garlic powder 1/2 tsp
Red chilli powder 1tsp
Tomato ketchup 1/2 cup
Salt,black pepper,sugar 1 tsp

Put the butter and hot sauce in pan heat on low flame add black pepper and garlic powder ,sugar also add tomato ketchup mix until thick .

In a mixing bowl add the plain flour ,red chilli powder ,salt
Coat the chicken wings in this flour mix.
Place the wings in the fridge for at least 1 hour .

Fry the chicken wings in hot oil when cooked take out and mix into the sauce.

Chicken Spring Rolls

Chicken spring rolls

Ramadan 3

Ingredients:
2 chicken breast cut into pieces
1 pack of 40 spring roll pastry
1/2tsp coriander powder
1/2tsp cumin powder
1/2tsp crushed red chilli
1/4 white cabbage chopped finely
Salt to taste
Knob of butter
1tbsp oil

Method:
Bring water to boil in a pan and add the chicken. Cook the chicken until its tender/cooked. Once cooled shred the chicken with a knife or hands then leave aside.
Heat oil and butter in a pan and add the cabbage,sauté until soft.
Add all the spices above and cook for a few mins.
Add the shredded chicken to the cabbage mixture and mix.
Put 1tsp of mixture in the pastry and fold the sheet then roll it.
Deep fry until golden brown.

potata egg balls

2 large mashed potatoes
4 hard boiled eggs
Salt,black pepper,chilli powder,anar Dana,green chillies,coriander ,bread crumbs

Hard boil the eggs and cut in half .
Boil potatoes take skin off and mash mix In salt,black pepper,anar Dana ,chilli powder,chillies and coriander ,

Place some of the potato mix in hand spread out so a round shape is formed then place the egg in centre cover with potato and make a ball shape with hands.

Dip in egg and bread crumbs and shallow fry.

Additionally some grated cheese can be added to the potato mix for a twist.

Healthy Dips (carrot and beetroot)

Healthy Dips:

Carrot dip:
Peel&chop 5 medium carrots. Boil them until soft.
Heat 1tbsp oil in a pan and add 1 crushed garlic clove& 1/2tsp ground cumin for few minutes then add carrots and 2tsp lemon juice and cook for further few mins.
Remove from heat and allow to cool for 10mins.
Place carrot in a blender with 3tbsp yogurt and mix until smooth.
Serve the carrot dip with breadsticks or warmed pitta bread.

Beetroot dip:
Blend 1 packet of cooked beetroot with 3tbsp yoghurt and a little water.
Serve with toasty fingers or roti or veg

Chana Chaat (chickpea salad)

Use this in gol gappe or yogurt chart and even salads.

Ingredients:
1-2 tins chickpeas drained
1 large tomatoes chopped finely
1 large onion chopped finely
2-3 med size potatoes boiled and cubed
1tbsp Coriander finely chopped
1tbsp Shan chart masala
2tbsp lemon juice

Method:
In a bowl add all the above ingredients and mix. Add masala and lemon juice and serve!!!

Shami Kebabs

Shaami kebabs

Although this recipe is the packet one but follow a few suggestions and they will come out perfect.
A snack or a lunch and its healthy.

Ingredients:
1/2kg keema chicken/lamb
1 pack laziza shaami kebab mix
Coriander chopped handful
1 egg whisked
Oil for frying

Method:
Follow the instructions on the pack of laziza shaami kebab mix and make patties and leave them in the freezer until they are firm.
Take out after half hour and dip them in the beaten egg and fry on a hot pan with oil. Cook until golden on both sides and serve with rice, chapatti, pitta bread or in a burger!
