potata egg balls

2 large mashed potatoes
4 hard boiled eggs
Salt,black pepper,chilli powder,anar Dana,green chillies,coriander ,bread crumbs

Hard boil the eggs and cut in half .
Boil potatoes take skin off and mash mix In salt,black pepper,anar Dana ,chilli powder,chillies and coriander ,

Place some of the potato mix in hand spread out so a round shape is formed then place the egg in centre cover with potato and make a ball shape with hands.

Dip in egg and bread crumbs and shallow fry.

Additionally some grated cheese can be added to the potato mix for a twist.

A fun way to get kids to eat their vegetables!

 

Ingredients

Aubergine

Courgette

Potato

Gram/ Chana flour

Salt

Chilli flakes

Chopped Coriander

Jeera/cumin seeds

 

Method:

Mix flour, salt, coriander and spices in a bowl with water to make a thick batter.

Slice Veggies and mix in to batter

Deep fry veg one by one

serve with ketchup and chilli sauch

Spicy potato wrap

Ingredients:
4-5 potatoes peeled and cubed
1-2 med onions chopped
2-3 med tomatoes chopped
1tsp chilli powder
1tbsp cumin
Pinch of tumeric (haldi)
Salt to taste
Sprinkle garam masala powder
Fresh coriander
Wraps
Salad
Ketchup
Mayonnaise
2-3 tbsp oil

Method:
Make the masala and add the potatoes. Cook for 5mins then add some water and cover and cook till potatoes are cooked.
Garnish with coriander and garam masala
Warm the wrap&put a spoon of potato and salad with mayonnaise and ketchup and serve

Purple Porridge

Purple porridge

Start your day packed with goodness.

Ingredients:
6-8tbsp porridge oats
1 glass of milk semi skimmed
2tbsp frozen berries

Method:
In a bowl add oats with milk and heat in microwave until bubbling. Add a little water to loosen the mixture. Mix together and add the berries in it and serve

Chana Chaat (chickpea salad)

Use this in gol gappe or yogurt chart and even salads.

Ingredients:
1-2 tins chickpeas drained
1 large tomatoes chopped finely
1 large onion chopped finely
2-3 med size potatoes boiled and cubed
1tbsp Coriander finely chopped
1tbsp Shan chart masala
2tbsp lemon juice

Method:
In a bowl add all the above ingredients and mix. Add masala and lemon juice and serve!!!

Chicken Mix Roll

 

mayo chicken burger bun

if you ever have any steamed/roast chicken left over this is a great recipe.
i personally hate throwing food away and am always thinking of new ideas to utilise left over food.

shread the steam/roasted chicken into small pieces add 1 boil egg diced,chopped cabbage ,salt,blackpepper and mayyonaise mix and spread on buns top with salad.
serve with french fries.
