Fairy love cakes:
Fairy cakes are loved by everyone and there is so much you can do with the decorations and icing.
Different colours and designs make it so beautiful and special for any occasions. I love fairy cakes.
100g softened butter at room temp
100g caster sugar
2 eggs beaten
100g self raising flour
2 tbsp milk
1tsp vanilla essence
5-6tbsp Icing sugar
Red food colour
Pre heat the oven to 170 gas mark 4. Line the tray with the cup cases.
Cream together the butter and sugar until pale. Beat in the eggs, little at a time and stir In the vanilla essence. Fold in the flour, add little milk at a time till you get a soft dropping consistency. Spoon the mixture in the cases to a half full leaving some room for them to rise.
Bake in the oven for 10mins till golden brown. Leave aside to cool.
To make the icing:
Put the icing sugar in a small plastic cup with 2tsp water and mix till smooth paste. Add the food colour and mix.
Drizzle the icing over the cakes and leave in the fridge to set then serve!!!!
